I think No Country for Old Men is a good one. The prose is less dense. Books like The Orchard and Blood Meridian are more dense and a little tougher to follow. The Road is a solemn story but well-written and simple by CM standards. Thing about McCarthy is the Gothic style of writing is its own monster and requires an adept reader. Cormac was as adept in the Southern tradition as anyone I can recall since Faulkner.
